Today, she’s not just surviving; she’s thriving, having established a successful business that brings the authentic flavors of her homeland to the palates of Juárez residents.

A Forced Departure, a New Beginning

Karen’s journey to Ciudad Juárez was not by choice but born out of necessity. Leaving behind her family, her established business, and the familiar landscapes of Colombia, she sought protection and a better life. Her initial hope was to seek political asylum in the United States, but fate intervened, and circumstances at the border prevented her from completing the process.

Yet, Karen refused to be deterred. Instead of succumbing to despair, she chose to embrace Ciudad Juárez as her new home. With an entrepreneurial spirit that had served her well in Colombia, she decided to channel her energy into what she knew best: traditional Colombian cuisine. “It’s not easy to arrive in another country, leaving your family, your parents, when they are still alive,” Karen shared, her voice tinged with emotion as she reflected on the immense challenges of adaptation.

In her kitchen, Karen meticulously prepares a menu that is a culinary ode to Colombia. This event aims to showcase the talent and economic autonomy of women entrepreneurs in mobility, providing them with a platform to share their skills and products with a wider audience.
