MIKA, a celebrated cocktail bar from Guadalajara, is hosting a month-long guest residency in Mexico City. For all of October 2025, the team will be behind the bar at Animal, the modern restaurant at The St. Regis Mexico City, serving a carefully designed menu of six signature cocktails meant to complement the food.

This collaboration builds on Mexico City’s rising fame for inventive cocktails, but with a strong emphasis on hospitality. Since opening in Puerta de Hierro, MIKA has been known for its exact methods and dramatic presentations, promising a night that combines art, taste, and showmanship while maintaining a well-balanced drink.

Why MIKA’s guest bartending is a must-try this month

For local cocktail enthusiasts, this residency is an opportunity to try one of Guadalajara’s most popular bars without the travel. The visiting team will be serving from behind Animal’s bar, adapting MIKA’s sensory-focused style-which plays with aromas, textures, and temperatures-into a focused menu of their signature drinks, specially chosen for this location.

Six signature cocktails – what’s on the menu?

MIKA has created a special menu of six drinks to go with Animal’s modern dishes. Every cocktail features premium spirits, skilled technique, and an eye-catching presentation:

  • Mystic: a mezcal-forward ode to mystery, served from a chest with liquid nitrogen; Mezcal 400 Conejos and Aperol.
  • Lychee Rose: elegant and floral with strawberry gin, lychee and rose petals, crowned by an aromatic bubble.
  • Sugar Daddy: playful apple, caramel and cognac with a surprise twist.
  • The Best Pear: fresh and delicate; pear, fig and elderflower over a gin base.
  • Matchajillo 2.0: clarified and carbonated; vodka, matcha and coconut in poised balance.
  • Red Lights: a Mexican-accented mix with Mezcal 400 Conejos Espadín, tamarind, ancho chile liqueur and strawberry.

Who is behind the collaboration?

This residency is led by MIKA, which is part of Grupo Costeño, and hosted by Animal at The St. Regis Mexico City. The team states that the project’s goal is to raise the bar for Mexican cocktail culture through warm hospitality, new ideas, and a respect for local ingredients, inviting guests to experience “a story served in every glass.”

How long will the pop-up last?

The guest residency will take place throughout October 2025 at Animal, located inside The St. Regis Mexico City. Seating is limited, and reservations must be made directly with the restaurant. The original source provides no information on pricing or specific service hours.

When and where exactly?

Venue: Animal, The St. Regis Mexico City. Timing: The event runs for the entire month of October 2025, with service becoming part of Animal’s usual bar operations. Booking: Contact Animal to ask about availability and further details.
